My o4 rancher es has been reving up real high while I ride it. If I flick the throttle it will idle back down. I took it to the local honda dealer and he said that all it needed was some adjustment to the carb and lowered the idle speed. This did not fix it. The throttle froze up this winter while in my garage and I forced to to move and I have a feeling that this may have messed the throttle cable up. My question is how hard is it to replace the cable?
it does sould like you need a new cable. it is not hard to change at all, all you have to do is disconect it and put a new one. then all you have to do is adjust it up by the throttle, there will be a nut that you will turn.

Did you check under the plastic cover on the carb , the cover covers the throttle cable/throttle shaft and will slowly build up with dirt until the dirt/mud holds the throttle from going back to idle..
