Just picked up a 2004 Honda Forman rubicon 500 looks to be in fair shape for sitting in a field for 8-10 years gas tank busted for sure and the man said it would need breaks rear Berings and a carburetor . Where’s the best place to start on the road to recovery?

Replace all the fluids. Rebuild or replace the carb. See if you can make it run. I would consider that step one.
If you can't get it running you don't want to do brakes or bearings!
